Any ideas on the maximum tyre size for a 2010 Forester, 2.5 X (steelies) on a 25mm lift kit?

You should be able to go two to three sizes bigger without rubbing BUT:
You should theoretically always go just ONE size bigger or wider so as not to change your engines revolutions too much.
Say your stock tire is a 215/60 R 16. Then you can upgrade to:
225/60 R 16 or
215/65 R 16.
If you change your rims to say a 17 inch you need expert advice. (Or use Mr. Google to check the circumference of your intended tires against your stock.)  A 5% increase is OK. A 10% increase is perhaps too much. The turbo engine should be able to handle a bigger increase than the non turbo.

But I am sure there are tire experts on the forum that can give professional advice.
